Cancellations get "misunderstood" when they are written as a question. "Would it be possible to cancel?" invites a retention offer. "I am cancelling, effective from…" invites a confirmation.
Say what you have, that you are cancelling, and from when. Ask for written confirmation — that sentence is what saves you the argument about the next invoice.
An example
Gym membership, two years, wants to stop at the end of next month, one month notice in contract.
Dear Sir or Madam, I am writing to cancel my gym membership, registered under this email address. My contract states a notice period of one month, so I am cancelling with effect from the end of next month. Please confirm in writing that the membership has been cancelled, and let me know the date of the final payment. Thank you.

+They offered me a discount to stay.
That is a normal retention step, not a refusal. If you want out, reply once: "Thank you, but I would still like to cancel as of [date]. Please confirm." Repetition is what ends it.
+Do I need to send a letter by post?
Check your contract — some still require it. If it does, send the same text by post and keep proof of sending; email the identical text the same day so there is a timestamp either way.
+They kept charging me.
Reply to your own cancellation email so the thread shows the date, ask for a refund of charges after that date, and — separately — cancel the payment mandate with your bank.
